Il puro saccarosio \u00e8 elemento squilibrato, che crea disarmonia, malattia, acidit\u00e0 in varie parti dell\u2019organismo umano. E vedremo come, vedremo perch\u00e9.<\/p><p>Lo zucchero bianco pu\u00f2 essere derivato da barbabietola da zucchero, o dalla canna da zucchero. Quanto alla barbabietola, il sugo iniziale sta nelle radici. Per quel che riguarda la canna, si trova negli interstizi fra i nodi interni. Soffermiamoci sulla barbabietola: la radice \u00e8 nota dai tempi di Buddha e Confucio. In occidente veniva per\u00f2 utilizzata per l\u2019allevamento di bestiame, soprattutto le foglie.<\/p><p>Sino al 1700, la sola fonte di dolcificazione derivava dalla canna da zucchero, diffusa nel mondo. Il suo interno sugoso concedeva l\u2019utilizzo di una sostanza ricca di ferro, sali minerali, amminoacidi, vitamine. L\u2019esperienza fece s\u00ec che l\u2019essere umano, anche per la comodit\u00e0 di trasporto, apprendesse a seccare tale succo (detto \u201cmelassa\u201d). Quella polvere dolce, venne chiamata \u201cSale Indiano\u201d. Fu Napoleone -sempre lui ad accendere le micce- a dichiarare guerra a questo prodotto estero. Ben diverso da Marco Polo, l\u2019Italo-Corso avvi\u00f2 l\u2019embargo contro l\u2019Oriente. E\u2019 un trattamento delle fettucce di barbabietola con acqua calda, in un ampio tubo inclinato: le fettucce, grazie ad un\u2019elicoidale vanno verso l\u2019alto. L\u2019acqua calda fa uscire il sugo, che, data l\u2019inclinazione, va raccolto in un contenitore posto alla parte bassa del tubo.<\/p><p>Il sugo leggero, cos\u00ec ottenuto, contiene minerali, amminoacidi e zuccheri, anche diversi dal saccarosio. Le fettucce, una volta esauste, arrivano in cima al tubo e ne fuoriescono per cadere in altro apposito contenitore. Segue il cosiddetto processo di defecazione del sugo leggero. E per questo vengono utilizzate ossa di animali calcinate, che eliminano vitamine, sali minerali, zuccheri e danno un inizio di colore biancastro.<\/p>\t\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-23b9411 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"23b9411\" data-element_type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t\t\t<div class=\"elementor-row\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-ed58618\" data-id=\"ed58618\" data-element_type=\"column\">\n\t\t\t<div class=\"elementor-column-wrap elementor-element-populated\">\n\t\t\t\t\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-2b55f7c elementor-widget elementor-widget-text-editor\" data-id=\"2b55f7c\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t<div class=\"elementor-text-editor elementor-clearfix\">\n\t\t\t\t<p>Va detto che -su questo passaggio- esiste una campagna che \u00e8 peggio dell\u2019embargo napoleonico. Alcuni scienziati e giornalisti, entrambi ignoranti in materia (oppure prezzolati, facciano loro) affermano che tale processo avviene per lo zucchero di canna, ma non per quello da barbabietola. In pratica, si cambiano le carte in tavola, negando la realt\u00e0 storica. Si va cos\u00ec proclamando che \u201c<em>Il succo di barbabietole viene trattato attraverso l\u2019uso di un diffusore e miscelato con additivi per cristallizzarlo<\/em>\u201d. E <em><strong>questo \u00e8 falso, poich\u00e9 storicamente lo zucchero bianco \u00e8 sempre stato trattato con ossa animali calcinate e polverizzate.<\/strong><\/em> Lo si studiava, lo si studia in facolt\u00e0 di chimica e all\u2019istituto di merceologia. E ne parlavo con il prof. Ciusa (Merceologia &#8211; Bologna), nonch\u00e9 con il prof. Martino (Agraria &#8211; Perugia, anni &#8217;80). Ne trattammo pubblicamente con il prof. Pecchiai, in vari incontri pubblici a Bologna. E fu motivo di battaglie, assieme al dott. Mauro Montanari (agronomo e segretario delle Associazioni Erehwon e Satori in Bologna) e assieme al primario dott. Sensale.<\/p>\t\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-aff6048 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"aff6048\" data-element_type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t\t\t<div class=\"elementor-row\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-c01bb99\" data-id=\"c01bb99\" data-element_type=\"column\">\n\t\t\t<div class=\"elementor-column-wrap elementor-element-populated\">\n\t\t\t\t\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-c9708f4 elementor-widget elementor-widget-text-editor\" data-id=\"c9708f4\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t<div class=\"elementor-text-editor elementor-clearfix\">\n\t\t\t\t<p>Ma ritorniamo allo zucchero industriale (di barbabietola o di canna). Una volta trattato il prodotto con<em><strong> ossa macinate e calcinate<\/strong><\/em>, vi si insuffla anidride carbonica, per far precipitare la calce. Il liquido -in tal modo- diviene saturato, quindi pompato nelle fitopresse, per separare il succo zuccherino dai fanghi. Ulteriormente trattato con solfito di calcio (decolorante), quindi nuovamente sbiancato con acido solforoso. Si passa a condensare il liquido sin qui ottenuto, sino ad avere una sostanza sciropposa.\u00a0 Riscaldato sotto vuoto, comincia il processo di cristallizzazione. Mediante centrifuga, si separano sciroppo e zucchero grezzo.\u00a0 \u00a0 Dallo sciroppo, con procedimenti simili a quelli sin qui descritti, si pu\u00f2 ottenere uno zucchero grezzo di seconda qualit\u00e0 e una melassa commercializzabile, soprattutto per produzione di alcool e sostanze alimentari per il bestiame.<\/p><p>In realt\u00e0, giacch\u00e9 anche l\u2019industria dello zucchero di canna si \u00e8 uniformata alle procedure seguite per la produzione di semolato di zucchero bianco, ne consegue che quando il cosiddetto consumatore vede zucchero cristallizzato, lo deve riconoscere come zucchero industriale ed evitarlo accuratamente. Niente dannosi e costosi processi chimici, ma <em><strong>solamente passaggi meccanici di essiccazione naturale e di macinazione..<\/strong><\/em> Solo cos\u00ec si \u00e8 certi della \u00a0salubrit\u00e0 di ci\u00f2 che si utilizza:\u00a0<em style=\"line-height: 1.5;\"><strong>vitamina B, sali minerali, amminoacidi.\u00a0<\/strong><\/em><span style=\"line-height: 1.5;\">Insomma, <em><strong>un vero alimento e non un semplice dolcificante chimico<\/strong><\/em><\/span><span style=\"line-height: 1.5;\">.
